The past 6 weeks I’ve been road tripping around, showing Patrick the west coast. We borrowed a camper and flitted from lake to lake, friends to family. The upside of living so far away is that when I come “home”, I really get to immerse myself in it. For more pictures of beautiful British Columbia, I’ve shared a few favourites on my flickr.

When it comes to breakfast there’s nothing better than fresh trout. Yes, fish and bacon is the way to go. The bacon greases up the pan so the fish don’t stick. No salt and pepper necessary.

Fish and Bacon for breakfast serves 2

1. Catch trout.

2. Clean and gut fish.

3. Add 4-6 slices bacon to a medium hot pan

4. When the bacon fat starts to cover the bottom of the pan, add the fish. Cook each side for 3 minutes, or until the flesh flakes off the bone.

Serve with toast. If you don’t have a toaster, use the firepit.
